Growing up, Saturday mornings always consisted of two things: my dad's whole wheat blender pancakes, stacked like the Leaning Tower of Pisa, and skiing with my family. These pancakes have always been my absolute favorite, and they are incredibly easy to make. I may be drooling a little just thinking about them.
Ingredients:
- 1 cup buttermilk
- 1/2 cup milk
- 1 cup whole wheat kernels
- 2 eggs
- 1/3 cup vegetable oil
- 1 tsp salt
- 1 Tbsp honey
- 1 Tbsp baking powder
Directions:
- Combine whole wheat kernels and buttermilk in a blender, mix at high speed for a full 2 minutes
- Add milk and blend for 2 more minutes
- Add eggs, oil, salt, and honey into blender and mix well
- Just before cooking, add baking powder and blend in gently until just mixed
- Cook away and enjoy!
