Mom's Breakfast Cake


If you are looking for an easy and scrumptious breakfast for a group of people, this is fantastic. My mom used to make this version of coffee cake all the time for us kids growing up, and yes, we would eat the entire thing. This breakfast cake is great as a main dish with some coffee or hot chocolate, or as a side dish with some bacon and eggs (can't go wrong with bacon, right?).

Ingredients:

Cake:
  • 1 1/2 cup sugar
  • 5 tsp baking powder
  • 1 1/2 tsp salt
  • 1/2 cup softened butter
  • 1 1/2 cup milk
  • 2 eggs
  • 3 cups flour
Topping:
  • 2/3 cup brown sugar
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 6 Tbsp melted butter

Directions:
  • Preheat oven at 350 degrees
  • Cream together sugar and softened butter in a mixing bowl
  • Mix in eggs, baking powder, and salt
  • Slowly add in milk until well mixed
  • Add flour and mix until smooth
  • Place cake mixture into a greased 9x13 inch baking pan
  • In a small bowl, combine topping ingredients until well mixed
  • Sprinkle topping mixture in chunks over the top of the cake mix (as shown above)
  • Bake for 30-35 minutes, until golden brown and cooked through* 
*To make sure it is cooked through, just poke the cake with a knife or toothpick, and if it comes out clean it's ready to go! If it comes out a little gooey, keep baking and check a few minutes later.


Note: if you are cooking for a smaller group (2-4 people) just cut the recipe in half and it will be perfect!
