The Inn at Manchester Waffles

These are, by a long shot, the best waffles I have ever had (and I'm basically a waffle expert, thank you very much). If you don't trust me, at least trust the many people I have made them for that absolutely love them. The best thing about these waffles, is that they can go with so many different things. They are fantastic with good old-fashioned maple syrup, coconut syrup, berry syrup, peaches and whipped cream, berries and whipped cream, berry puree, honey butter, etc. Be creative!

Ingredients: 

  • 3 eggs, separated
  • 3/4 cup plain Greek yogurt* 
  • 3/4 cup buttermilk**
  • 1 stick melted butter
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1 Tbsp sugar
Yields: 6 waffles

Directions:
  • In a small bowl, combine egg yolks, Greek yogurt, buttermilk, and melted butter. Beat until well blended. 
  • In a large bowl, combine flour, baking soda, baking powder, sugar. Stir until well mixed. 
  • Pour liquid mixture into the large bowl and stir until well blended with dry ingredients.
  • In a mixing bowl, beat egg whites until stiff. 
  • Pour stiff egg whites into the large bowl, fold into the batter.
  • Pour waffle batter into greased waffle iron and wait with plate and fork at the ready!
  • Top waffle as you wish. 
  • Devour waffle.

*The plain Greek yogurt can be replaced by sour cream, I just prefer the protein-packed yogurt.
*If you find yourself without buttermilk, don't panic! Just pour 3/4 cup of 2% milk into a cup, add one Tbsp of lemon juice. Stir the liquids together and let it sit for a minute or two, and voilà
